My Grandmother must have come from the other side of the river - she spelled it with a T

BORSCHT

which is where the "Borscht Circuit" in the Catskills got its name from - all the New York City dwellers went there in the summer to escape the heat. They stayed in big hotels - Grossingers, the Nevele, etc. Sid Caesar and Mel Brooks and many others honed their comedy skills there...

the other side of the river, or even the next town over, is all you need to account for different (and equally "right") pronunciation or spelling. Especially when so often it's transliterated Cyrillic anyway.
