the were- is from the OE, wer, male human, cognate with the Latin vir
I'd always assumed the were- bit was related to weird, whch also ties in with fate (Weird Sisters), magic and change. All the meanings attached to wyrd work really well in this context, and you can imagine wyrdwolf (for instance) becoming wyrwolf then werewolf. Almost seems a shame if it's wrong.
