If I said "de la chèvre" I would be talking about one goat in particular. It also somewhat implies possession of said chèvre. < I think you mean possession by said chèvre, the goat doing the possessing rather than being possessed. Although I must confess the image of a goat possessed by demons has brightened my evening!
