Dear Keiva:
Just looked up water mills on Google and there's ample grist for the mill there. Here's a site with pictures and information about the history of the water mill. Undershot and overshot mills are discussed, but best are the drawings that show how the parts work.
*Note for clarification: undershot and overshot have nothing to do with gin mills.
