If a person talks about the benefits he has received from embracing his religion, is he giving a testimony or testimonial?

Testimony would be right, Lionel. This is a declaration or statement and can also be used to mean a confession of even a protest.

A testimonial is a formal recognition of someones worthiness, possibly in the form of a certificate, or a gift of some sort, as a mark of esteem.
