Technically, this really ought to be in Q&A, I guess; but I'm not back there yet, and this is hardly of great import anyway.
How do y'all pronounce this word?
a. pains taking
b. pain staking

I'll bet you're on b) to more readily accommodate the two sylLAbles in pain. ;-)

a but with a smaller space between the words I'm with Zed about the smaller space, but I'll go with B. It's really hard to tell, however. Note that in A the S is voiced and in B it is unvoiced.

I'd think that, without some very good acoustic analysis equipment, it would be very hard to tell what any person is doing with this. It's not like, say, pine needle. Do you say 'pie needle', 'pine eedle', or 'pine needle'?

Yeahbut (miss you, Mav!) 'pine needle' is two separate words; it's easier to create a space in which to enunciate both ns if you want to.
I shall try to work on voicing that s more: I'm afraid I tend to say pain-staking, which is not what the word means!

My point was that it's easier to listen to yourself and tell which way you say pine needle, not that it's easier to say it one way or another.

I'm more pain-s'taking. Not quite a glottal stop, but certainly not a flowing "staking" - something like the similar bit in mistaking. Definitely a distinct pain though.

Difficult though it may be, I have been trying to analyze my vocal production of this word, driving the lovely AnnaS up a wall in the process. I do purely believe that I am switching from a voiced sibilant to an unvoiced sibilant in mid-stream, making it something like painzstaking. Note that this does not imply any lengthening of the sibilant. I don't hear any interruption of any sort anywhere in the word.
YMMV

painzstaking
Hmm. It makes sense if there were some kind of juncture between the /s/ and the /t/, that the voicing would occur (i.e., /s/ > [z]), as is usual in such cases. It seems the choices are:
a. pain + staking, /pejn#stejkIN/ b. pains + taking, /pejnz#tejkIN/ c. pains + staking, /pejnz#stejkIN/
In casual speech, I think I pronounce it (a). As per Faldonem, YMMV.
Ceci n'est pas un seing.

The more you listen to yourself say it the less like yourself you will sound.
My condolences to the lovely AnnaS.

Like Faldage, I say this as one word of two syllables, but with no elision, glottal stop or interruption of any kind, as it is a compound word, but one word, nonetheless.
The "oooh, goody!" part is the chance to trot out my favorite "and-after-you-left-they-all-called-you-crazy" item, and that is, a vegetable which I truly detest, and refuse to eat, but staunchly defend it's oft misspelt name: Brussels Sprouts. This is misspelled more often that spelled correctly, except by the companies that grow or market them. Anything handwritten is likely wrong. It's due, obviously, to the double "s", but also to ignorance of the name's origin. There is no city named "Brussel"! :0)
