So, wwh, what is finnan haddie? Is it a fish hash?
It is a filleted haddock,smoke cured and flavored. Just warmed up in milk with a bit of butter, it is delicious.
I mentioned aldehydes a bit ago. Smoke has traces of aldehydes that kill bacteria, and keep smoked food from spoiling, but are gone before the food is consumed.
The haddock have been overfished, depleted, and no longer
so readily available as formerly.

Ha! I'm teaching musical theatre this year to high school students. I'm tempted to give them a copy of this thread.
