does anyone know an English culinary term equivalent to the Spanish word "criadillas"? For non-Spanish speakers: these are the testicles of a domestic food animal such as (ex-)ram, (ex-)bull.

I assume that this is a continental Spanish word. Does anybody know what the Mexican, Central or South American terms for criadillas. I looked through some reference books for an etymology of the word (alas, I don't have Corominas). Do you know if it's related to criar, criada?

Interesting list of synonyms. Here in Virginia, we simply refer to them as 'mountain oysters'--no particular chain mentioned.

Sweatbreads are the thymus of a young animal, such as a calf or lamb. Nice in a terragon sauce with a good petit syrah.
