In keeping track of counting objects, I often use 4 vertical strokes with a long diagonal slash through them, indicating sets of 5. What is this called?

The process is called "tallying."
I'm not aware of a specific name for the grouping, but you could call it a "bundle."
You might try asking Eric Weisstein over at Wolfram. I've asked him questions several times and gotten very quick responses.

Tally marks ( link). Harry Belefonte sang a song that uses the term, Day-O (the Banana Song)[/i]. "Come, Mr Tally man, tally me banana." Is thought that Roman numerals derived from a tally system. (The Greeks and the Phoenicians used letters of their alphabets to stand in for numbers: alpha and aleph standing for 'one'.)
