If you go to a closing do you have to give back all the wine and cheese you got at the last opening you were at?

And if you're the first or last in a string of scheduled entertainment at such events you could actually open a closing or close an opening...and without actually doing either, I might add.

And when you see a coffee shop with a sign announcing "Now open later!" how do you interpret that?

The onliest entertainment I had during the one closing of which I was the guest of honor at was when I got to actually® touch the check for umpty thousand dollars before the bank scooped it.
