Oh Great Wordsmiths,

I am looking for a verb in the same vein as "decapitate" but to describe the removal of wings rather than head.

I would also be interested in the words that mean the removal of human body parts-- how would you say the removal of arm, leg, hand, foot?

I don't know that there is a word for it; you might try to find some biology dictionary. In the meantime, I offer the coinage "pinionectomy", to welcome you aBoard.

Being a cruciverbalist, I know that the adjective for "having wings" is alar so my immediate thought was disalarate. But... The Latin noun for wing is ala and the adj. is alatus so I used onelook's handy wild card feature and found...
