Baked Eggplant (Diet eggplant but not without the taste)

Ingredients

1 large eggplant
1 large tomato
½ medium sized onion
salt to taste
¼ tsp chili powder

Optional ingredients
4-5 chopped spinach
12 - 15 peas

In US, it is called eggplant. In UK, it is known as aubergine. In India we call it brinjal. But no matter where you live or what you call it, here is a recipe that's sure to excite all palates.

Cut thin round slices of eggplant. 1 eggplant will generate 12- 15 pieces. Grease a large baking pan and arrange eggplant on it. On each slice of eggplant add one slice of tomato and a couple of rings of onion. Sprinkle chopped spinach and top with one pea. Add salt and chili powder. Bake it for 20 to 25 minutes at 350 deg. F. Once they are slightly brown, remove from oven and arrange in a platter.

Serving suggestion: Serve hot as a light snack or with pilaf rice.

Serving size: 4 per person.
