According to an article published today by the Associated Press, there are a large number of people who eat a mostly vegetarian diet, supplemented occasionally with meat. The article describes these folks thus:

"These so-called 'flexitarians' — a term voted most useful word of 2003 by the American Dialect Society — are motivated less by animal rights than by a growing body of medical data that suggests health benefits from eating more vegetarian foods."

I went to the website of the American Dialect Society to see (1) if there was such a critter and (2) if they vote about new words and (3) if "flexitarian" was one of those words. http://www.americandialect.org/ And the answers are yup, yup and yup.
