LARGE Bowl.
13 x 9 x 2 inch pan
Pastry brush
Pre-heat oven to 350
Use DIAMENTO filo pastry (frozen) Diamento is available in northeast USA - the best! Do not try with frozen filo as it crumbles and makes a mess.
DEFROST filo in fridge for a good two hours (I usually defrost it overnight.)
1 lb feta cheese - crumbled
1/4 lb butter (one stick)
6 eggs
Big bunch dry Fresh spinach.
MIX up in the bowl the crumbled cheese, eggs and spinach.
Layer filo in bottom of pan, brush liberally with butter. Put layer of mix , another layer if filo, brush with butter etc - repeating until almost to top of pan ending with a layer of filo brushed with butter.
Pie will puff up in cooking.
Bake one hour at 350 degrees.
Allow to cool in pan one hour before cutting.
Makes dinner for six or can be cut into small pieces as party food.
CALORIES : Zillions but worth every one. Delicious.
Nowadays fresh available all year, thank goodness!

Although Greek Easter is still a week away, Wow, I appreciate your posting this recipe; I love the stuff. But why did you post it in this particular forum (Q&A about words)? Did I miss something? Or is it just the privileged effusions of your well-earned red hat*?

Also, if you don't recommend frozen filo, then why do you suggest we defrost it? Thank you for helping out this red-hat initiate.
