It is a filleted haddock,smoke cured and flavored. Just warmed up in milk with a bit of butter, it is delicious.
I mentioned aldehydes a bit ago. Smoke has traces of aldehydes that kill bacteria, and keep smoked food from spoiling, but are gone before the food is consumed.

The haddock have been overfished, depleted, and no longer
so readily available as formerly.

A while back there was a discussion of jazz terms and as far as I could see the only non-lewd word was "the".

I had finnan haddie chowder in Nova Scotia - utterly fabulous!
